Easy Curry Chicken Recipe

It was about 5pm and I get the question that every person dreads, “What’s for dinner?” Luckily we had the short list of ingredients for an easy curry chicken recipe that we love!

I thought since I’m not the only one who has to answer, that adrenaline pumping question, I would share this easy recipe with you so you can make it in a pinch. This takes very little prep time and you can serve it with whatever vegetables you choose. Tonight we chose carrots and kale.

Ingredients & Supplies

  • 2lbs chicken thighs (bone in, skin on)
  • Lime
  • 1 Tbsp Curry Powder
  • Salt & Pepper
  • Bowl
  • Cookie Sheet
  • Parchment paper

Preheat the over to 400 degrees. Grab a cookie sheet and put some parchment paper on it for easy clean up.

Whisk the juice from the lime (all of it) and the curry power together, in a bowl that you can use to dip the chicken in to coat it.

You guessed it – coat the chicken in the mixture and place it skin side up on the baking sheet. Sprinkle with salt and pepper.

Bake it for about 45 minutes until the top is browned and the juices run clear. Let the chicken rest for about 5 minutes before serving.
